Recluse Chili

Thanks to a feisty gal named Sandy, I’ve been cooped up inside the past week working from home and wearing pajamas round the clock. Finally I decided the only solution was to make chili, because I can’t think of a better food to make when it’s cold outside and you have oodles of time on your hands. I did have to go to two separate grocery stores to find ground chicken, but that’s to be expected in the wake of such a storm. I threw in a hodgepodge of chili-esque ingredients like tomatoes, onions, peppers, paprika, red pepper flakes, cumin, kidney beans, and black beans. A sprinkling of shredded cheese, fresh scallions, and a few saltines and I’ve got lunch for a week. Thank goodness, because it doesn’t look like I’m going anywhere anytime soon.
